What I’ve Cooked Lately: Part 2

(Quick little side note: I just realized that emails for next year’s TAPIF program were sent out today!  I remember that day last year.  The emails being sent out are probably what’s responsible for all the people finding my blog today by teaching “TAPIF acceptance”, haha.  If you are reading this and are going to participate in the program next year, best of luck to you!)

Hey all, remember my first “What I’ve Cooked Lately” post?  Well a second one is WAY overdue, therefore this post is gonna be super long (Update: okay not as long as I thought, since most of them link to other websites).  As with the first one, if one of the dishes below sounds good, click it, and it’ll either jump you down to the written-out recipe later in the post, or take you to the website where I found the recipe!

There are some things I didn’t include in this list, like potato soup, enchiladas, and homemade pizza sauce, because I didn’t really follow a recipe!  I’m also planning on making taco soup for the first time today and I don’t really feel like following a recipe, so we’ll see how it goes 🙂

Update: I made the soup and am eating it now.  Conclusion: awesome!  I basically just threw a bunch of stuff in a pot and let it heat: chopped up beef, shallots, garlic, olive oil, beef broth, tomato puree, corn, kidney beans, taco seasoning, cilantro, and cheese.  Mmm

What I’ve Cooked Lately

(Disclaimer: Sorry about the spacing in this post.  WordPress hates me.)

While writing my second London post, I went off on a tangent about food I’ve made lately, which made me realize I’d like to share some of the dishes I’ve cooked since I’ve been here!  I won’t be doing step-by-step instructions like I did here with the delicious fruit pizza but instead, just listing some of the recipes I use!

Like I’ve mentioned before, I rarely eat at restaurants here.  I actually got some street food (socca and a crepe) the other day and also got a snack with some friends at a restaurant the next day, and I felt bad about it!  I enjoy cooking and it’s so much less expensive to eat at home, especially here, that I prefer eating at my own apartment or at a friend’s.  While I do eat a lot of simple salads with lardons or mashed potatoes with corn (my favorite: MMM!), I also often cook big dishes that I can eat for several days.

Pretzel Fruit (Pizza) Bars

Okay, so I know according to my poll (you can still vote here!!) the majority of people want to read about my additional preparations for France, but I’ve been holding off because I’m hoping to have an apartment locked down soon.  So I’ll write about it once that happens!  Cross your fingers that I’ll have it figured out this week sometime.

In the meantime, I figured I’d do my first cooking/baking post.  I’ve made several different things lately–guacamole twice, mango salsa once, and fruit bars once–but I’m not used to blogging yet so I didn’t take any photos!  However I decided to make the fruit bars again today, so I documented the process.
